Guacamole is perhaps one of the simplest, most perfect food creations of them all. Avocados? yes… Limes? yes… Salt? yes… Garlic? yessssss. Of course not all guacamole is created equal though. The one major deal breaker is that any guac that’s really worth its salt is homemade. Fortunate enough, guacamole is incredibly easy to make. If you’ve never tasted homemade guacamole before, I’m giving you fair warning that you will be raising the bar so high that store bought guac will henceforth taste like watered down avocado. Food has always been a joyful part of my life. Some of my most vivid memories from growing up are moments at the family dinner table, gliding on the front porch swing enjoying pastries and coffee with my parents, and of course all of the holiday gatherings with grandparents, aunts, uncles, and cousins. Food nourishes and brings us together. Of course, when you’re a kid your only responsibility is showing up to tuck in. French Chocolate Cupcakes
My big brother recently had a milestone birthday and for the occasion I decided to dust off my baking hat to mix up a batch of my all-time favorite chocolate cake recipe. I don’t bake very often because I like to cook to taste and am not so great at following recipes… sort of important in baking. Not to mention if there are batches of baked goods in the house I will eat them all. But seeing as the big brother only turns 30 once, it was worth the risk 😉
I’m quite picky about desserts, chocolate in particular. In fact, I typically don’t care for chocolate baked goods because they usually aren’t as rich as I’d prefer. For perspective, I don’t care for chocolate if it’s less than 72 percent cocoa (milk chocolate is sugar, not chocolate.) I also tend to only test out low maintenance recipes meaning anything that doesn’t require exotic equipment or ingredients. This is a reason why I really love French cooking. French cooking is all about using refined techniques to make simple food rich and elegant. If you spend more time shopping the perimeter of the grocery store (produce, dairy, meats and fish) more often than not, you can find most ingredients for a French recipe already in your kitchen. What the Beans is for Lunch?!
I am a huge veggie burger fan. And when I say huge I mean huuuuuuuuuge. And this post is about making the homemade veggie burger great again. While perusing through my meager looking fridge and pantry (tomorrow is the grocery run,) trying to come up with a substantive meal for my lunch party of three, I spotted two cans of beans and instantly thought of bean burgers. I recently made an attempt at bean burgers using a recipe from Pinterest, but found them lacking in seasoning.
